Brief Introduction:
Soybean lecithin is a product extracted from the oil foot of soybean oil. It is an ester composed of glycerin, fatty acid, choline or cholamine, and can be dissolved in oil and non-polar solvents. The composition of soybean lecithin is complex, mainly containing lecithin (about 34.2%), cephalin (about 19.7%), inositol phospholipid (about 16.0%), phosphatidylserine (about 15.8%), phosphatidic acid (about 3.6%) and other phospholipids (about 10.7%), in the form of light yellow to brown viscous liquid or white to light brown solid powder.
