Brief Introduction:
Vitamin B6 is one of the B vitamins and is the general name for all 3-hydroxy-2-methylpyridine derivatives that exhibit the biological activity of pyridoxal. Vitamin B6 includes pyridoxal, pyridoxamine and pyridoxine. Its phosphorylated form is a coenzyme in the amino acid metabolism process, such as the coenzyme of aminotransferase. Pyridoxal and pyridoxamine can transform into each other in the human body. Vitamin B6 is easily soluble in water, slightly soluble in fat solvents, not heat-resistant, and sensitive to ultraviolet rays under alkaline conditions.
